Last Minute Cake for Your Coffee

You’re having friends over for coffee when suddenly you realize you have nothing to serve with the coffee (or tea, or chocolate…). You may want to serve something home made, but that doesn’t mean you have an hour to spare. So what do you do? You make these apple pies.

We found this recipe at Yammie’s Noshery and there are plenty of other recipes there that could put you in a food coma, of the nicer kind.

 Two Minute Apple Pie Parfaits

1 firm apple
1 tablespoon brown sugar, honey, or maple syrup
1/2 tablespoon cornstarch
1/4 teaspoon vanilla
1/4 teaspoon cinnamon (more or less, depending on what you like)
Granola and/or ice cream for topping (This is my favorite granola recipe. Here’s a healthier version)

Peal and chop the apple. Toss it with the brown sugar, cornstarch, vanilla, and cinnamon. Microwave for about 1 minute or until the apples are tender. Top with granola and ice cream if desired.

You can multiply this recipe for as many parfaits as you want. You can either mix it all up and divide it into the glasses and cook them each separately, or you can mix it all up, cook it and then divide it into the glasses. If you cook all the apples in one bowl for multiple servings, just stir after each minute until the apples are done.

Of course you still have to serve proper coffee with the pies. If you don’t have one already make sure that for next time you get some fresh coffee beans, a coffee grinder and a French press if you don’t have an espresso machine. If you want to go the extra mile, roast your own green beans. If you are reading this because you want to save time finding an easy recipe we are guessing you aren’t the type though. Whipped Cream and Other Coffee Toppings

Maybe the cake isn’t all about the icing, but it does help if the icing tastes nice. Otherwise, why have icing?

When it comes to coffee some like it plain, some like it with milk, and some like it with topping. Whipped cream is popular for some coffees like mocha and sometimes the whip comes with chocolate, or other things in it, or on it. If you run a coffee business the topping can make or break you. At least if you have a client like the author of this blog. You see I love whipped cream and if they give me the fake stuff I tend to avoid it. Hence, in London you will usually find me at Nero’s as they use real cream. My only complaint is that they don’t sweeten it.

Now you might not run a coffee shop, but if you like indulgent treats and experimenting with your coffee then there are some toppings worth trying. Below you find some ideas.

* Add a shot of Baileys to your coffee and then top it with whipped cream with a shot Baileys in it (add whilst whipping) and a few flakes of chocolate (you can grate some chocolate with a cheese grater, or chop it with a knife)

* Like orange? Add some orange essence into your coffee, a bit of honey or brown sugar, then add a tiny bit of orange essence to your whipped cream as well and top it off with a piece of candid orange. You can also add orange zest to the whip if you like it a tad more bitter.

* You can also have even MORE coffee in your coffee: add 2 teaspoons espresso powder or 2 1/2 teaspoons freeze-dried coffee crystals and a generous tablespoon of sugar (or honey, or maple syrup) into 1 cup heavy cream. Whip as usual, tasting and adjusting the sweetness toward the end.

* If you love chocolate, you can use that for your cream. In a double boiler or the microwave, melt 3/4 cup bittersweet chocolate chips. Let chocolate cool until still liquid but not hot, about 5 minutes. Whip 1 cup heavy cream until soft peaks form. Add 1/2 chocolate mixture and beat until combined. Add remaining chocolate and 1 tablespoon sugar and beat until stiff peaks form.

Other ideas is to add almond essence, crushed candy cones (for that Christmas flavour), crushed Daim chocolate pieces (a Swedish favourite), vanilla powder, or vanilla essence, cinnamon, chai tea powder (or chai spices: nutmeg, ginger, cinnamon, cloves and cardamom)

Christmas Drinks

Christmas is coming up and we’ll…drink to that. Of course, when we drink we’d love if it includes coffee. Fresh roasted coffee beans that are freshly ground to be precise. We may even roast the green coffee beans ourselves to get the perfect blend.

As it’s usually cold around Christmas time a little bit of liquor with the coffee helps to keep you warm. Find below a nice Christmas drink to keep you warm and happy. And remember, whatever you do: use fresh roasted beans of a good quality. It’s the best you can do to ensure the drink turns out nice. And of course: freshly whipped cream. Not the stuff that comes out of a can – after all you want a traditional Christmas!

Ingredients:

4 oz strong coffee
1 1/2 oz amaretto liqueur
1 1/2 oz coffee liqueur
1 oz butterscotch schnapps
1 oz creme de cocoa
fresh whipped cream
grated chocolate, for garnish

Directions:

Combine strong coffee and liqueurs in a glass. Stir to combine and top with fresh whipped cream. Garnish with grated chocolate.

Serve warm or over ice.

 

Educating Your Coffee Shop Clients

Have you ever heard about educating your clients? If you haven’t, you might wonder why you should educate them? Why do you tell your clients you sell fresh roasted coffee beans if they don’t have nose enough to figure it out themselves (like hello that scent should say it all)? Why tell them that if they buy the green beans they can roast them at home to come up with their own roasts and blends? And why tell them about the laborious process of harvesting and roasting coffee? Why not just serve them the coffee and the associated products and hope they like them?

There are two reasons why you educate your clients: passion and money. If you sell the best fresh roasted coffee beans in the vicinity chances are you are passionate about it. Likewise, if you are selling fairtrade coffee, knowing that the farms your coffee comes from have properly paid employees, you are probably passionate about letting clients know so that next week they don’t buy coffee that came from slave trade.

So where do the money come in? Well, if someone knows for sure that your coffee is fairtrade, chances are they are prepared to pay more for it. Likewise, if you describe the elaborate process of finding the best beans, roasting them yourself and making unique blends, it will sound like you are selling something valuable. If people know it’s valuable, they are happy to pay more. When they know the hard work and expertise that’s gone into something they are usually prepared to pay more.

If you manage to really impress someone, or make an impression there is also the possibility of them telling their friends about it. If they tell their friends then they might end up your customers also. You will also find that the more someone thinks about coffee the more they want it – the more engaged you get in something the more you wanna try everything around it.

Coffee and Work Morale – Does Coffee Make Employees Happier?

It’s well known that most people who can afford it love to sneak out to get a cup of their favourite coffee during a long day at the office – to many coffee is the life saviour that makes work bearable during long, and/or stressful days.

As an employer you might not think twice about coffee – either your employees get their own whenever they can, maybe you have a filter coffee machine at the office. However, you may want to start bringing coffee to the office in a more elaborate way. Why? Because incentives and perks make people work better. If your staff is under the impression they are well looked after – if they receive good bonuses, great gifts, lots of encouragement and praise, chances are their performance will drastically increase together with their loyalty.

Studies have shown that what most people are looking for at work is not money alone – in fact just money as an incentive increases productivity a lot less than verbal praise, feeling valued by the employer and generally being well looked after. Whilst a high pay check is definitively something people will want, never underestimate the effect of good incentives.

So how does coffee come into this? Well, creating a great work environment might include upgrading that old coffee machine with a Nespresso, or espresso machine. It might also be a good idea to once a week get your staff some fancy take away coffee that is a proper treat. Even if you have an espresso machine in the office, chances are your employees won’t have time to make pumpkin spice lattes, or white mocha lattes.

Another bonus of using coffee as part of a great work environment is that studies have shown that productivity increases when people smell of coffee. To say that the aroma of coffee is welcome to most is therefore an understatement.

Autumn Blueberry Cake

For you coffee fanatics out there it might be a challenge to find something that adds to your coffee, rather than subtracts from it. That is to say: it makes your fresh roasted coffee beans taste even sweeter than when just having a plain cup of Joe.

Here at the Wholesale Coffee Co. we consume quite a lot of coffee. Our favourite at the moment is the Tunki coffee – after all Tunki coffee did receive an award as best tasting coffee in the world! All in all, a cup of Tunki coffee therefore isn’t a bad way to start your morning!

We wanted to find something seasonal to pair with our Tunki coffee with as a treat and just found this gorgeous recipe for Blueberry-Lavender Coffee Cake with lemon drizzle at Healthy. Delicious., which is looking very promising. It even promises that it won’t taste too much like perfume from the lavender. Phew.

Ingredients
For the filling
  • 1 cup blueberries
  • ¼ cup water
  • 2 tablespoons honey
  • ½ teaspoon dried lavender
For the cake1 cup Gold Medal white whole wheat flour
  • 1 cup Gold Medal all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter (3/4 stick), softened
  • ? cup sugar
  • ½ teaspoon vanilla extract
  • 2 eggs
  • 1 cup buttermilk
For the glaze
  • ¼ cup confectioners sugar
  • 1 lemon, juiced
Preparation
  1. Prepare filling by combining blueberries, water, honey, and lavender in a small saucepan. Bring to a boil; cook 5 minutes, stirring frequently, until thick and syrupy. Let cool.
  2. Heat oven to 350*F. Grease the bottom and sides of a loaf pan.
  3. In a mixing bowl, combine the flours, baking soda and salt. In a second bowl, cream together the butter and sugar. Add the egg and vanilla. Stir in half the dry ingredients – the batter will be very thick and doughy. Stir in half the buttermilk – the batter will thin back out. Repeat.
  4. Pour half the batter into the prepared pan. Spread with blueberry filling. Top with remaining batter. (The pan will be ½ to ¾ full).
  5. Bake for 45-55 minutes. Let cool.
  6. Add the confectioners sugar and lemon juice to a small saucepan set over medium heat. Cook 1-2 minutes, stirring constantly, until sugar is melted. Immediately drizzle over the cake.

Monday Morning Coffee Wisdom

It’s that time of the week where you look at your schedule and have a potential meltdown…and pick up the week’s first cup of coffee and drink it like you mean business. Because you do – it’s Monday morning and you have a mountain of work, making your schedule look more like Mount Everest than a walk in the park. Thankfully the caffeine will soon kick in, you will start to feel happier, more relaxed…and potentially even excited about your week ahead. That’s what coffee does to you: it opens your mind to possibilities. It keeps you going until wine o’clock when it’s time to chill out and do your best to enjoy the view of where you got so far on Mount Everest. After all, each day you get a little bit further up the mountain and instead of stressing out the best thing to do is to relax and enjoy the view that is a little bit better than yesterday. Even if you actually managed to fall and go down the mountain that day, at least you know one more route that DOESN’T work. Here at the Wholesale Coffee Co. we love Monday mornings. It’s time for strategy sessions surrounded by green coffee beans, fresh roasted coffee beans, espresso machines, and fresh espresso served all round – whether made by Nespresso machines, or we ground our own coffee beans and made the espresso with a traditional espresso machine. It’s quite a treat.

The best thing about Mondays though is love. No, seriously. If you love what you do Mount Everest looks kind of grand from the Monday morning perspective. Quite divine in fact – it’s your mission, your purpose in life. Or at least part of it. The other part might be friends, family, relationships, hobbies…and as with work they are all mountains as everything comes with obstacles. What City Takes Coffee Seriously in America?

Coffee is said to be an art. A fine art. Some drink it just to get a caffeine kick in the morning (hey, it’s Monday today, we don’t blame you!), but really to make good coffee is akin to making good wine – it takes and artist with a flair for science to create the perfect cup. Imagination and science comes together to give you something to tantalize your taste buds.

There is one city in the U.S. that takes coffee seriously, very seriously. The fresh roasted coffee beans are so fresh they were probably green coffee beans up until the morning of the day you were having your coffee, being roasted to perfection in the basement of your favourite coffee shop.

The city…we almost forgot (but you probably guessed it right anyway): Seattle. Given the amount of rain you cannot be that surprised: people there will need something to keep them awake and what better than coffee?

In Seattle you can actually “often read where the coffee beans came from, how those beans were roasted–and even a short résumé of the barista who’s making your cup,” according to the Huffington Post. Rather impressive, don’t you think?

Second in place for best coffee city came Portland, third New Orleans, fourth Providence and fifth San Francisco (read more about each city here). Seems like the big cosmopolitan cities like New York and Los Angeles are missing out, but do not fret: each will have at least one or two coffee shops that serve cafe extraordinaire.

There’s Nothing Like Coffee…

There really is nothing quite as inspirational as the smell of fresh roasted coffee beans in the morning. If you ever worked in a coffee shop that roasted their beans fresh, you know what we mean. As we sell green coffee beans we sometimes roast ourselves, or take a deep breath when we open the bags of fresh roasted coffee beans we also sell. Then we have to use them all very quickly so they don’t go stale. It’s the perfect excuse to use the beans all that much faster…

As coffee really does inspire us beyond that first refreshing cuppa in the morning (we do work with it after all) we thought we’d share some funny “coffeology” we found lately. Or maybe not funny, more like…profound. If you believe in the power of coffee that is.

Mocha Coconut Fudge

Now when it comes to the coffee ingredients you stock in your pantry you might include fresh roasted coffee beans, a slab of coffee flavored chocolate, chocolate covered espresso beans, instant coffee and maybe a coffee cake…but how many stock coffee fudge? Not many. It tastes divine though, so even if it isn’t exactly healthy it’s a brilliant treat. Especially when you make it yourself so you know it’s only pure ingredients used. So get those coffee beans out of the cupboard (or buy coffee online from us…brilliant idea! 😉 We have plenty of fresh roasted coffee beans in stock!) and start making fudge today!

Ingredients

  • 12 ozs semisweet chocolate (chopped)
  • 12 ozs chocolate (white baking, chopped)
  • 15 ozs sweetened condensed milk
  • 1 12 tbsps espresso powder (or instant coffee)
  • 1 tsp vanilla extract
  • 1 12 tsps coconut extract
  • 1 tbsp coconut oil
  • 12 cup flaked coconut (toasted)

Directions

Spray an 8×8 pan with non-stick spray.

Add semisweet chocolate to a double boiler, and melt completely. One melted, add in half of the sweetened condensed milk, the vanilla, the coffee powder and 1/2 tablespoon of coconut oil. Stir with a spatula until combined and fairly smooth, then spread evenly in the bottom of the pan. Mixture will be thick. Place in the freezer for 30 minutes.

Add white chocolate to a double boiler and melt completely. Add in remaining condensed milk, coconut oil and coconut extract, stirring until combined. Remove fudge from freezer and add white chocolate on top, spreading evenly to coat. Top with toasted coconut, then chill in the refrigerator for 60-90 minutes.

When ready to cut, fill a large cup with hot water. Dip a sharp knife into the water, then blot on a towel. Use knife to cut fudge into your desired size of squares.

Note: the melting can also be done in the microwave. I suggest melting the chocolate first on medium power in 30 second increments, stirring after each time. Once melted, add in remaining ingredients and stir until smooth. You can also use this Lindt Coconut White Chocolate for the coconut layer.
